Italian Skillet Baked Eggs with Smith & Jones Pizza

Quick to prepare yet full of flavour, this dish is protein-rich, wholesome, and perfect for any meal of the day. The mix of saucy eggs, melty cheese, and fresh herbs makes it both nourishing and indulgent a café-style treat you can enjoy at home.



INGREDIENTS

– 3 eggs
– 5 tbsp Smith & Jones pizza pasta sauce
– ¼ cup onions, chopped
– ¼ cup bell peppers, chopped
– 2 tbsp Parmesan cheese, grated
– 2 tsp oil
– 6-8 fresh basil leaves
– Salt to taste
– ½ tsp black pepper
– 2 slices bread

METHOD OF PREPERATION

 In a cast iron pan, heat the oil. Add the chopped onions and bell peppers and cook until translucent. Add the Smith & Jones pizza pasta sauce and seasonings, then bring to a simmer. rack the eggs into the sauce and bake in the oven until the whites are set and the yolks are cooked from the outside. Garnish with fresh basil leaves and grated Parmesan cheese. Serve with crusty bread for dipping into the sauce and breaking open the egg yolks.
