Mango Avocado Salad

This salad is worth trying because it’s light yet satisfying, combining sweet mango, creamy avocado, and crisp veggies with a zesty herb dressing making it both refreshing and nourishing in every bite.

INGREDIENTS

  • (Dressing)
    – 2 Tablespoon avocado oil
    – 1 Tablespoon lemon juice
    – Salt to taste
    – 1 Teaspoon black pepper powder
    – 1 Teaspoon honey
    – Fresh herbs
  • (Salad)
    – Half a bunch fresh arugula lettuce
    – Salt to taste
    – Cherry tomatoes
    – Diced mango chunks
    – Diced avocado chunks
    – Thinly sliced red & yellow bell peppers
    – Toasted sunflower seeds
    – Fresh greens
    – Grated coconut

METHOD OF PREPERATION

To prepare the salad, first make the dressing by mixing avocado oil, lemon juice, honey, salt, black pepper, and chopped fresh herbs. In a large bowl, place the arugula and other fresh greens as the base. Add cherry tomatoes, mango cubes, avocado chunks, and thinly sliced red and yellow bell peppers. Sprinkle toasted sunflower seeds and grated coconut on top. Finally, drizzle the dressing over the salad, toss lightly to combine, adjust the seasoning if needed, and serve immediately.
