INGREDIENTS

1 piece pita bread, warmed
1/2 cup Greek yogurt
2 large eggs
2 tablespoons olive oil
20 grams garlic, minced
10 grams black olives, chopped
10 grams celery, finely chopped
10 grams spring onions, chopped
2 tablespoons chili flakes
Parmesan cheese, grated
Salt to taste

METHOD OF PREPERATION

Warm the pita bread and keep it aside. In a pan, heat olive oil and sauté the minced garlic until fragrant. Add the chopped black olives, celery, and spring onions, cooking for a minute until slightly softened. Break in the eggs, season with salt, and cook while stirring gently until scrambled and fluffy. Stir in Greek yogurt for a creamy texture, then mix in chili flakes to add heat. Place the warm pita on a plate, spread the creamy scrambled egg mixture over it, sprinkle generously with grated Parmesan cheese, and serve hot.
